Latiza - Pound Cake Pudding

Ingredients: 
1 sponge cake or pound cake  
1 2/3 C evaporated milk  
1/2 C cornstarch  
7 Tbsp sugar (add more to your taste)  
2 tsp vanilla extract  
1/4 C butter or margarine  
2 eggs well beaten  
ground cinnamon  
 

Preparaions:  Slice cake and layer on large platter.  Place 1 1/3 cups water in a sauce  
pan.  Add milk and sugar before water reaches a complete boil; stir well  While stirring, dissolve corn starch in 1/3 cup water.  Add vanilla extract into the boiling sauce pan and gradually add milk over low head until mixture thickens and is cooked. Remove from heat and add butter.  Add beaten eggs 1/4 portion at a time, stirring vigorously. Pour over sponge cake.  
Sprinkle with cinnamon.  
Makes 8 servings 
 
Kalami- Corn Pudding

Ingredients: 
4 C water boiling  
1 C masa harina  
1 C cornstarch  
1 C sugar  
3 C thick coconut milk 

Preparations:  Mix masa harina, cornstarch and sugar into the coconut milk until there are no lumps.  

Gradually pour masa harina paste into 
boiling water, over low heat, stirring constantly until mixture thickens.  Pour 
into a tray. Cool before cutting. 

 
Fried Pumpkin Turnover `
(Buchibuchi) Filling

Ingredients: 
1 small pumpkin  
1 cup sugar  
1/2 tsp. cinnamon 
Preparations:  Peel pumpkin.  Cut pumpkin into medium-sized cubes and boil in water  
until tender. Drain. Place pumpkin in a  
large bowl and mash. Add sugar and cinnamon.
 
Turnover Pastry

Ingredients: 
4 cups flour  
1 tbsp. sugar  
3/4 coconut milk  
1 tsp. shortening  
1/2 tsp. baking powder (optional) 

Preparations:  Mix flour and coconut  
milk until easy to handle. Roll dough  
thinly and cut into 5-inch rounds. Fill one tablespoon onto dough, fold over and  
press ends. Pinch ends with fork. In a  
deep skillet, fry turnovers in hot oil until golden brown. 
 
Champulado - Rice Pudding

Ingredients: 
1 C rice (uncooked and washed)  
1 C sugar  
2 8-oz. milk   
3 Tbsp cocoa  
 
Preparations:  In a medium saucepan, boil  
8 cups of water and add rice until done.  
Lower heat. Dilute cocoa in 1/4 C milk and add to rice. Add sugar and stir. Adjust to taste and cook to your thickness.
 
Million Dollar Pie 

Ingredients: 
1 can sweetened condensed milk  
¼ cup lemon juice  
1 (16 oz.) can crushed pineapple, drained  
1 cup chopped walnuts  
1 (8 oz.) cool whip -- OR  
*2 - (8 oz. each) cream cheese  
*2 pkgs dream whip  
2 Graham cracker pie crusts 

Preparations:   Mix first five ingredients, and pour into prepared crust. Chill.  
Makes 2 pies.
