Bananas in Coconut Milk 

Ingredients: 
 - 5 ripe bananas, cut lengthwise 
 - 1 can coconut milk 
 - dash of salt

Preparations: 

Place bananas in crock pot; add coconut milk and salt.  Cover and simmer over medium heat until boiling. Turn heat down and remove cover.  Cook until liquid evaporates and bananas start to brown.. 
"Careful not to burn."


 
Chicken Soup

Ingredients: 
 - 3 large potatoes cut in pieces 
 - 1 whole chicken cut in small pieces 
 - salt to your taste 
 - 1 tbs.. black pepper 
 - 2 large carrots cut in slices
Preparations: 

Fill a big pot with water. Bring to boil, add salt and pepper. 
Add chicken, potatoes, and carrots. 
Reduce heat and simmer for 1 hour until chicken is tender


 
Black Beans

Ingredients: 
 - 1 lb black beans 
 - 1 tbs. salt 
 - 1 tsp. black pepper 
 - 1 tbs. cumin 
 - 3 cloves garlic 
 - 1 med. onion cut in small pieces 
Preparations: 

Soak the black beans overnight. 
In a big pot, add 15 cups of cold water, with cumin, salt, pepper, garlic, and onions.  Bring it to boil.  Add the black beans without the water used to soak them. 
Reduce heat  and simmer until black beans are tender.


 
Cranberry Salad

Ingredients:

  • 1 bag fresh cranberries
  • 1¼ C water
  • 2 C sugar
  • 2 T Knox gelatin
  • ½ C water
  • 1 C chopped apples
  • ½ C celery
  • ½ C chopped walnuts
Preparations:

Place cranberries in food processor and chop. Add 1¼ cups water and place in medium sauce pot and simmer for 20 minutes. 
Remove pot from burner and add sugar. Stir well.
Completely cool.

Dissolve Knox gelatin in ½ cup water and until slightly thickened. Mix into completely cooled cranberries and add chopped apples, celery and nuts. Chill.
