Kalami - Corn Pudding

Ingredients: 

  4 C water boiling 
  1 C masa harina 
  1 C cornstarch 
  1 C sugar 
  3 C thick coconut milk 

Preparations: 

Mix masa harina, cornstarch and sugar into the coconut milk until there are no lumps. 

Gradually pour masa harina paste into boiling water, over low heat, stirring constantly until mixture thickens.  Pour into a tray. Cool before cutting. 


 
Champulado - Rice Pudding

Ingredients: 

  1 C rice (uncooked and washed) 
  1 C sugar 
  2 8 oz. milk 
  3 Tbs. cocoa 

Preparations: 

In a medium saucepan, boil 8 cups of water and add rice until done.  Lower heat. 
Dilute cocoa in ¼ C milk and add to rice. Add sugar and stir. Adjust to taste and cook to your thickness.


 
Million Dollar Pie

Ingredients: 
  • 1 can sweetened condensed milk 
  • ¼ cup lemon juice
  • 1 (16 oz.) can crushed pineapple, drained 
  • 1 cup chopped walnuts 
  • 1 (8 oz.) cool whip OR   *2 - (8 oz. each) cream cheese  *2 pkgs. dream whip 
  • 2 Graham cracker pie crusts


  • Preparations: 

    Mix first five ingredients, and pour into prepared crust. Chill.    Makes 2 pies. 

    Apple Pie

    Ingredients: 
    • 1 bag granny smith green apples
    • 3/4 C sugar
    • 1 Tbs. corn starch 
    • 1 tsp. cinnamon
    • 1 Tbs. lemon juice 
    • 1 Tbs. margarine 
    • 1 frozen Pillsbury pie crust


    Preparations: 
    Peel one bag of green apples to make 6 cups.  Pour into a bowl, mix ingredients and bake at 425 degrees for 50 minutes.  Makes8 servings. 

     
    Pumpkin Crunch Pie

    Ingredients: 

      1 16 oz can pumpkin filling 
      1 can carnation evaporated milk 
      1 c sugar 
      3 eggs 
      ¼ tsp. cinnamon (may add more) 
      1 Duncan Hines yellow cake mix 
      1 c walnuts chopped 
      2 sticks unsalted butter 

    Preparations: 

    Grease 9x12 inch pan, sides and bottom with oil.  Line pan with wax paper, sides included.  Mix in a large bowl the first 5 ingredients with a wooden spoon (no mixer.) 
    Pour ingredients into grease pan,  and spread cake mix evenly on top. Add chopped walnuts and melted  unsalted butter. 

    Bake at 350 degrees for one hour.Let it cool for 1/2 hour, then flip over on serving dish. 


     
    Rosketti

    Ingredients:

    • 1C butter
    • 1 C Sugar
    • 1 slightly beaten egg
    • 1 Tbsp vanilla extract (lemon extract or anise seeds)
    • 1 box cornstarch
    • 1 Cup flour
    • ½ C carnation evaporated milk (enough to roll out dough)
    Preparations:

    Preheat oven at 350 degrees. 
    Cream butter and sugar. Add beaten egg and vanilla extract (you may add more vanilla-at least 3 tablespoons but, cut down the milk measurement.) Sift four and cornstarch and add to mixture. Mix well; add milk and mix until you are able to roll into a ball. 
    Roll dough out and shape into a pretzel. Place on lightly greased cookie sheet and bake at 350 degrees for 20 minutes until golden brown.

    *Sev likes to refrigerate the dough for an hour before rolling. More manageable.


     
    Fresh Coconut Pie

    Ingredients:

    1 Stick margarine
    2 well beaten eggs
    1 ½ C sugar
    1 C coconut grated and chopped
    1tsp. salt
    1tsp. vanilla 

    Preparations:

    Combine margarine, eggs, sugar, coconut, salt and vanilla; pour  into unbaked 8 or 9 inch pie shell.
    Bake at 325 degrees for 45 to 60 minutes. 
    Pie should be firm.
